Erin McKenna , founder and owner of BabyCakes has recorded a short clip for Business Insider on how she started one of the most popular vegan bakeries in New York City.
McKenna has published two cookbook and received praised from dozens of vegan dessert loving celebrities like Zooey Deschanel, Kiernan Shipka and Jason Schwartzmann.
McKenna explains to Business Insider the concept behind her desserts.
“BabyCakes is a bakery for people with food allergies. So basically if you’re allergic to wheat, gluten, eggs and soy, it’s the shop for you.”
“Most notably, the thing you take away is texture and flavor,” McKenna said of the difference between traditional egg and dairy desserts. She then goes on to explain that with any sweet at BabyCakes, that’s never a problem.
“Luckily, I’ve done it enough and I’ve been working on things long enough I feel like I’ve cracked the code.”
